  • 1Kg frozen berries, defrosted overnight
  • 1Kg Chelsea Jam Setting Sugar
  • 625g unsalted butter, diced
  • 225g Chelsea Icing Sugar
  • 1tsp vanilla essence
  • ½ tsp salt
  • 462g plain flour, sifted
  • 150g cornflour
  • 75g almond meal

Method

Jam : 1. Place berries in a pot on a low heat for 10-15 minutes, stir occasionally.
2. Add Chelsea Jam Setting Sugar and bring to a simmer, stirring occasionally
3. Simmer on a low heat for a further 20-30 mins or until it reaches the desired consistency.
Biscuits : 1. Pre-heat oven to 170ºC
2. Place the butter, Chelsea Icing Sugar, vanilla and salt in a stand mixer bowl with a paddle and lightly cream on a low speed.
3. In a separate bowl mix flour, cornflour and almond meal together.
4. Slowly add the dry ingredients into the wet and mix on low speed. Once all combined remove mixture from the machine and turn onto a well-floured bench
5. Divide mixture into 4 blocks and wrap and refrigerate for two hours.
6. Cut pastry into 20g pieces, roll into balls and place in a small muffin silicon mat (5cm diameter)
7. Bake at 170c for 15-20 minutes until golden brown, while still hot press a hole in the centre with the handle end of a wooden spoon and let cool.
8. Once cold pipe berry jam and dust with Chelsea Icing Sugar.
