The key to a full flavoured banana bread is using very ripe bananas. The riper the bananas the more flavour they have.

Ingredients

  • 3 ripe bananas, mashed
  • 1 egg, lightly beaten
  • ½ cup Chelsea Raw Caster Sugar
  • ⅓ cup buttermilk
  • 1 tbsp butter, melted
  • 1 ½ cups self-raising flour
  • ¼ cup plain flour
  • ½ tsp baking powder
  • ½ tsp ground cinnamon
  • ¼ tsp ground ginger

Topping

  • 1 tbsp rolled oats
  • 1 tbsp Chelsea Raw Caster Sugar

Additional tips

Banana bread is so versatile that it can be eaten at almost any time.  Try toasted with butter for a delicious quick and easy breakfast, or freshly sliced for an afternoon treat.

Method

Preheat oven to 180C conventional or 160C fan forced.
Grease and line an 11cm x 25cm loaf pan with baking paper.
In a large bowl combine banana, egg, Chelsea Raw Caster Sugar, buttermilk, butter and beat until well combined.
Sift flours, baking powder and spices in a separate bowl.
Add the banana mixture to the dry ingredients and mix until just combined.
Pour into loaf pan. Top with oats and extra Chelsea Raw Caster Sugar, bake for 55 minutes or until cooked when tested with a skewer.
