Ingredients

  • 1½ cups plain flour
  • 1 tbs cornflour
  • 1 tsp baking powder
  • 1 cup rolled oats
  • ¾ cup Chelsea Raw caster Sugar
  • 225 g unsalted butter, cold & chopped
  • 2 eggs, lightly beaten
  • 250 g punnet raspberries (or strawberries, blueberries)
  • ⅓ cup flaked almonds
  • 3 tbs Chelsea coffee Sugar
  • Thickened cream, to serve

Method

Grease and line a 19cm x 30cm slice tray ensuring baking paper extends over the long edges of tray.
Sift flours and baking powder into a large bowl. Stir in oats and Chelsea Raw caster Sugar . Rub in butter with your fingertips until mixture resembles breadcrumbs. Stir in eggs until combined.
Press three-quarters of the oat mixture into the base of the prepared tray. Arrange berries over the oat mixture. Add almonds and Chelsea coffee Sugar to the remaining oat mixture. Stir until combined. Sprinkle over top of berries.
Cook slice in a moderate oven for 40 mins, or until golden brown. Stand in pan for 30 mins.
Use paper to lift slice out of pan. Cool on a wire rack. Cut slice into rectangles.
