Quick, easy but I think I’ll use less syrup as was overflowing onto microwave plate. Maybe I’ll use maple syrup like someone else did and see how that goes. However in saying that use Chelsea recipes a lot. Thank you ☺️

Easy microwave pudding: On a typical freezing spring May day during lock down, I was looking for something quick and hot for sweet at lunch time to warm everyone up. This recipe took minutes to make and worked really well. My microwave is a 1900 watts and the inner sponge came out a nice texture after the recommended time. Syrup yummy! Served with custard. Went down really well with the troops.

This was fabulous. Served 2 of us with lots left over. Added more golden syrup on top plus a scoop of ice cream and a bit of cream.........

Replace the golden syrup with maple syrup!!!!!! I used melted butter instead. And also replace the white sugar with soft brown sugar. Maple syrup is so much yummier ;)

I was very impressed! So simple yet so delicious. Perfect fix for those late night sugar cravings. Very light and fluffy sponge, golden syrup could definitely be swapped for any sweet sauce/jam and it would still taste great.

Great last minute pudding...very easy, basic pantry ingredients...made it a few times now

Method
Lightly grease a 1 pint pudding bowl. Place syrup in the bottom of pudding basin.
Mix flour, sugar and butter together and then beat in the egg, water and milk until it resembles a thick batter like consistency.
Spoon mixture into pudding basin and cover with plastic wrap.
Cook in the microwave on high for 2 minutes. Take plastic wrap off and cook for a further 2 minutes and then leave to stand for 2 minutes before serving.

- 2 Tbsp Chelsea White Sugar
- ½ tsp finely grated lemon zest (optional)
- 1 cup Meadow Fresh Milk (or Soy/Rice milk) (250ml)

- 30g Butter, melted (or margarine)
To serve
- 2 bananas, sliced
- 1 punnet blueberries (or frozen berries, defrosted)
