Our Funfetti Fudge is a colourful, sweet treat packed with sprinkles and joy!. It’s perfect for celebrations and adds a burst of fun to dessert.

Ingredients

  • 1 cup Chelsea Caster Sugar (225g)
  • 125g butter, cubed
  • ½ cup full fat milk (125ml)
  • 225g mini marshmallows (white, or a mixture of white and pink)
  • 500g white chocolate, roughly chopped
  • ½ cup colourful sprinkles + 2 Tbsp extra for sprinkling (125g)

Additional tips

Turn this into a 100s and 1000s fudge by adding 150g crushed plain biscuits! Mix in at the same time as the sprinkles.

Store in an airtight container in the fridge. This fudge keeps well for a couple of weeks. Can also be frozen.

Method

Grease an 18cm x 28cm rectangular slice pan and line with baking paper.
Place sugar, butter and milk in a medium-large heavy-based saucepan on medium heat. Cook, stirring, until mixture begins to boil. Boil for 3 minutes, stirring frequently.
Turn heat off and stir in marshmallows, until half melted. Add chocolate and stir until smooth. Stir in the sprinkles.
Pour into prepared tin and smooth the top. Decorate with extra sprinkles.
Refrigerate for 4-6 hours, or until set. Remove from tin and slice into squares. Store in an airtight container in the fridge.
