Break the noodles up and cook following packet directions (keep the seasoning mix packets unopened). Drain the noodles and place in a large bowl. Mix in the courgette, spring onions, carrot, eggs, flour and the sachets of seasoning mix.
Heat the oil in a large non stick frypan over medium high heat. Ladle in 4 pancakes and fry for 2 - 3 minutes. Carefully turn over and cook other side. Drain on paper towels while you cook the 2nd batch. Serve with tomato or soy sauce.
