  • ¾ Cup Chelsea Soft Brown Sugar
  • 2 Eggs
  • ½ Cup Vegetable Oil
  • 1 Cup Pecan Nuts, roughly chopped
  • 500g Pumpkin, peeled, steamed and mashed
  • 1 ½ Cups Plain Flour
  • 1 Teaspoon Baking Powder
  • 1 Teaspoon Bicarbonate of Soda
  • 1 Teaspoon Ground Cinnamon
  • ½ Teaspoon Ground Allspice

Method

Place Chelsea Soft Brown Sugar, eggs and vegetable oil in a bowl and whisk on high speed for 10 mins.
Stir in chopped pecans and mashed pumpkin then fold in sifted dry ingredients.
Pour into a greased and paper lined 12cm x 23cm loaf pan and bake at 160°C for 1/4 hours.Remove loaf from pan and allow to cool before serving sliced with butter or margarine.
