Vanilla Porridge with Honey Maple Fruit

Deliciously creamy porridge topped with syrupy fruit. This will get you going in the morning!

Ingredients

  • 115g butter or soft margarine
  • 1/2 cup vegetable oil
  • 1 ¾ cups Chelsea White Sugar
  • 2 eggs
  • 1/2 cup milk
  • 1 tsp vanilla essence
  • 2 c self raising flour
  • ½ tsp baking soda
  • 1/2 tsp cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp salt
  • 4 Tbsp cocoa
  • 2 1/2 cups grated zucchini
  • 1/4 cup ground walnuts
  • ¼ c dark chocolate chips

Additional tips

1. For a tangy version, add a little grated lemon zest to the fruit. Apricots can be substituted with tinned plums or peaches.

2. Set up your workspace by gathering clean tools, bowls and utensils. And make sure to keep a trashcan within arm’s reach.

Method

Place the oats, milk, water and vanilla in a saucepan. Bring to the boil, stirring often until thickened.
Drain the apricots, reserving a tablespoon of juice, heat together in a another saucepan until warmed through.
Spoon porridge into serving bowls, top with apricots and drizzle with Chelsea Honey Maple Flavoured Syrup to serve.
