Method

Soak the apricots in the wine overnight. Puree the apricots and return to the liquid in which they soaked.
Dredge the chops in flour and seasoning and brown on both sides in heated butter.
Put the chops in a casserole and cover with the apricot puree. Cover the casserole and bake in a moderate oven for 30 minutes.
Correct seasoning and sprinkle over with the Chelsea Soft Brown Sugar. Bake about 15 minutes longer until well done and evenly glazed.
